There are many books published on the history, theory and science of this plan. 

 

 

        Here are vegetarian definitions.

 

Vegetarian:  Believes in or practices vegetarianism.

 

Vegetarianism:  The theory or practice of living on a diet made up of vegetables, fruits, grains, nuts, and sometimes animal products (as milk and cheese).

 A vegetarian does not eat meat, fish or fowl. 

 

Vegan:  A strict vegetarian:  One that does not eat or use any animal products, including meat, fish, seafood, eggs or dairy products.  Being a vegan is a total way of life. 

 

By giving up eating animals, you are also benefiting from avoiding the many pesticides, antibiotics and drugs used on the animals.

 

Several diets focus on some or all of these principles. 

 

 

    People adopt this diet for several reasons. 

 

Some choose it for the health benefits:

 

The diet tends to be low in saturated fat, high in fiber and rich in vitamins and minerals.

There are endless choices of starches, grains, pastas, fruits and vegetables.

 

Fruits are substituted for sugar and candy.

 

Some of the many sources of veggie protein include:  tofu, peanuts, cashew nuts, pecans, sunflower seeds, almonds and beans of all kinds.

 

Because of this, there tends to be a lower risk of heart disease, high blood pressure, and diabetes.

 

There is a decreased risk of many kinds of cancer including breast, ovarian, colon and lung cancer. 

 

There is a general gain in health and well being. 

 

Most will have a lower weight due to the lower fats and high fiber.

Some choose it for the concern of animal welfare.

 

There is a strong segment of people who have witnessed the inhumane treatment of animals that are slaughtered for our consumption. Animals and animal products are avoided by those who are working to improve the life and well being of  animals.
